Ash gourd is usually seen in savoury dishes, but its mild flavour makes it surprisingly beautiful in desserts. In this phirni, finely grated ash gourd adds a soft, delicate texture while Gulkand brings a naturally floral sweetness.
▪️ 1 cup finely grated ash gourd
▪️ 3 tbsp basmati rice
▪️ 2 cups full-fat milk
▪️ 3 tbsp Gulkand
▪️ 2–3 tbsp jaggery, or to taste
▪️ ¼ tsp cardamom powder
▪️ 1 tbsp chopped almonds or pistachios
▪️ 1 tsp dried rose petals
Soak the rice for 30 minutes. Drain and blend with 2–3 tbsp water into a slightly coarse paste.
Peel and grate the ash gourd. Squeeze out excess water and cook it on low heat for 5–7 minutes until soft.

Bring the milk to a gentle simmer. Add the rice paste and keep stirring on low heat until the mixture thickens and the rice is completely cooked.
Add the cooked ash gourd and simmer for another 3–4 minutes, allowing the flavours to come together.
Turn off the heat. Once the mixture cools slightly, add Amrutam Gulkand, jaggery, and cardamom. Mix well.

Pour into small earthen bowls or serving glasses. Chill for 1–2 hours and garnish with chopped nuts and rose petals.
