A comforting one-pot khichdi made with moong dal, rice, spinach, carrots, ginger, cumin, and ghee. This wholesome combination provides plant-based protein, iron-rich greens, and nourishing ingredients in a simple, easy-to-digest meal.

▪️½ cup rice
▪️½ cup yellow moong dal
▪️2 cups fresh spinach (palak), finely chopped
▪️1 small carrot, finely chopped
▪️1 tsp grated ginger
▪️1 tsp cumin seeds
▪️½ tsp turmeric powder
▪️1 tbsp desi ghee
▪️4–5 cups water
▪️Salt to taste

Wash the rice and moong dal thoroughly and soak them together for 15–20 minutes. Drain before cooking.

Heat ghee in a pressure cooker or heavy-bottomed pot. Add cumin seeds and let them crackle. Add grated ginger and sauté for a few seconds.

Add the chopped carrot and spinach. Sauté for 2–3 minutes until the spinach begins to wilt.

Add the soaked rice and moong dal along with turmeric and salt. Mix everything well.

Add 4–5 cups of water and pressure cook for 3–4 whistles, or cook covered in a pot until the rice and dal become soft and creamy.
Add more warm water if you prefer a thinner consistency.

Finish with a small spoonful of ghee and serve warm.
