Gulkand Karchikai

Make festive Gulkand Karchikai with a crispy outer covering and a delicious coconut, jaggery, nut, and rose Gulkand filling. A traditional sweet with a floral twist.

 

 

Crispy Karchikai has always had a place on Indian festive plates. This version brings Gulkand into the traditional coconut and nut filling, adding a delicate rose flavour to every bite.

 

 


Ingredients

For the outer covering
▪️ 1 cup maida
▪️ 2 tbsp fine rava
▪️ 2 tbsp desi ghee
▪️ A pinch of salt
▪️ Water, as needed

For the Gulkand filling
▪️ ½ cup grated fresh coconut
▪️ 3 tbsp Gulkand
▪️ 2 tbsp finely chopped almonds
▪️ ½ tsp cardamom powder
▪️ 1 tbsp poppy seeds, lightly roasted
▪️ 3 tbsp jaggery 

▪️ Oil for frying


Method

 

 

 

Step 1: Make the Dough

Mix maida, rava, salt, and ghee. Rub the ghee into the flour until the mixture feels crumbly. Add water gradually and knead into a firm dough. Rest for 20 minutes.


 

 

Step 2: Prepare the Filling

Lightly roast the coconut on low heat. Add jaggery and let it cook well. Allow them to cool. Mix with Gulkand, almonds, cardamom, and poppy seeds.

 

 

Step 3: Roll the Karchikai

Divide the dough into small portions and roll each into a thin circle.

 

 

Step 4: Fill & Seal

Place a spoonful of the Gulkand filling in the centre. Fold the circle over to form a half-moon and press the edges firmly to seal. Create a simple pleated edge or use a Karchikai mould.

 

 

Step 5: Fry Until Crisp

Heat oil on medium-low heat. Fry the Nevri until golden and crisp on both sides. Drain on a kitchen towel.


 

 

Step 6: Cool & Serve

Allow them to cool slightly before serving so the Gulkand filling sets and the outer shell stays crisp.

Tips

▪️ Keep the dough firm rather than soft for a crisp Karchikai.
▪️ Don't make the filling too wet - excess moisture can make the Karchikai lose its crispness.
▪️ Fry on medium-low heat so the outer covering cooks evenly without browning too quickly.
 ▪️ Let the Karchikai cool completely before storing in an airtight container.
