Inspired by the traditional Coastal Karnataka Genasu Kayi Haalu, this Sweet Potato Coconut Payasa is made with just a handful of wholesome ingredients. It comes together in minutes, doesn't need reheating, and makes for a comforting vrat-friendly meal at home or the office.

 

 

Ingredients

▪️2 medium sweet potatoes

▪️1½ cups freshly extracted thick coconut milk

▪️3-4 tbsp grated jaggery / liquid jaggery 

▪️½ tsp cardamom powder


 

Method

 

 

Step 1: Cook the Sweet Potato

Wash the sweet potatoes thoroughly and boil or steam until soft. Peel the skin, grate them, and allow them to cool completely.

 

 

Step 2: Prepare Fresh Coconut Milk

Blend freshly grated coconut with a little warm water and strain through a muslin cloth or fine sieve to extract thick fresh coconut milk.

 

 

Step 3: Prepare the Jaggery Syrup

Dissolve the grated jaggery or liquid jaggery in the coconut milk. Strain if required to remove any impurities and let it cool.

 

 

Step 4: Prepare the Kheer

In a bowl, combine the grated sweet potato, fresh coconut jaggery milk, and cardamom powder. Mix gently until everything is well combined.

 

Step 5: Garnish & Serve

Serve immediately or chill for 15–20 minutes before serving.
